Phil Halls, from Little Plumstead, tells us about his job as brewing director of Grain Brewery.

Name: Phil Halls

Age: 46

Job title and employer: Brewing director at Grain Brewery

My job in a nutshell: Ensuring we have enough top quality beer for our customers and it gets to them when they want it. I also organise events, marketing, invoices and everything else that goes with running a busy business, and I like to keep my hand in by brewing a beer once in a while too.

How I got into my job: About 10 years ago a good friend called Geoff suggested to me that it would be a good idea to start a brewery. I was yearning to run my own business and I already liked beer, so it was an easy sell. Geoff used some redundancy money, sold his car, and I re-mortgaged my house so we could buy some equipment and our first set of casks. It grew from there.

The most enjoyable part of what I do: Selling a product that people are actually really happy to buy.

You might not know this about my job: I have a folder in my email account just for label collectors from Russia. I get about three emails a week from that side of the world asking if I could send them some bottle labels. Maybe one day I will.

My best day at work: I was able to buy a glass of Grain in the coolest bar in Amsterdam. It wasn't actually a work day, but it was the most satisfying experience of my life with Grain, and it felt very good leaning back and saying 'that's my beer'.

My first job: Watching paint dry - and I was very good at it. It was a special paint used for tennis courts and my main role was checking that each layer of thick paint was the perfect dryness before the next layer was painted. Too wet and it would never dry properly, too dry and it would crack.
