A popular city pub has announced its new pop-up kitchen, offering freshly made pittas, tacos and fried chicken.

Brix and Bones sous chef Iain Carter, 40, is going to be bringing Bubba Kitchen to The Earlham in Earlham Road every Monday. 

Pitta options include shredded king oyster mushroom with truffled marmite mayo, kraut and pickles, and lamb barbacoa with kraut, jalapeno mayo and lime pickled onions.

The tacos feature Norfolk lamb with BBQ sauce and pickled cabbage or fried chicken with honey butter hollandaise and pickled red cabbage.

Mr Carter was previously behind the Holy Guacamole pop-up and has worked at the Dial House, Prime and The Coach and Horses in Thorpe Road.

"Bubba is informal slang in North America for brother," he said. "I've worked for so long now in hospitality that I feel like my colleagues are my brothers and sisters.

"They are the family I choose and I wanted to put on an industry night for the city's hospitality staff that revolved around the food.

"It's so hard to get good quality affordable food on a Monday when we're having our weekend - now we can.

"The Earlham is the perfect fit for Bubba. It has fun vibes in a drinking venue near the city that isn't a club."

There will be a 20pc discount on food for all hospitality workers with an up-to-date payslip and The Earlham will be running drink offers from 3pm till close including two-for-£12 cocktails.

Mr Carter will also be offering 20pc off food for Hanison Hospitality Gold Card holders, which can be purchased for £30 from The Earlham or The Black Horse.

Bubba will be open every Monday from 4pm starting on May 22.
