Each week we put a Norwich resident in the hot seat and ask them 10 questions about themselves. This week we spoke with Chef-Proprieter of Roger Hickman's Restaurant, Roger Hickman.

Describe Norwich in three words...

Vibrant, friendly, safe.

If you were stranded on a deserted island with three other people, who would you want them to be?

Aiden Byrne (chef-proprietor of the two Michelin starred Church Green pub in Cheshire, and who worked with Roger at Adlard's in Norwich early in his career), he's a great mate, and he could cook for us all. Nick Faldo as we could play a round of golf together. Nick eats in my restaurant when he is in Norfolk and Darren Huckerby. Darren is one of my Cringleford Veterans team-mates, and he's a great character to have a drink with.

If you could be anyone else, who would you be?

Jay Rayner – so that I could go to restaurants and belittle people without having to have any catering experience at all.

How would you spend a perfect weekend in Norwich?

I would have a full restaurant for lunch and dinner on the Saturday, popping out to the Grosvenor Fish Bar for fish and chips between shifts. Then on Sunday morning I'd play football for Cringleford Veterans, before lunch at Stoke Mill. Sunday evening would be spent at home on the sofa with my family and dog, binge-watching a box set of something like Game of Thrones.

Would you rather spend a night in front of the telly or a night out in the city?

When you work five nights a week, evenings at home are precious – but I do like a big night out in Norwich once in a while.

What's your biggest fear?

Heights. I did a bungee jump from 200 feet in Australia once – never again!

What's your mantra in life?

I have two, both food related: Life is too short to eat bad food; and there's no such thing as a free lunch.

What song defines your life?

I'm a big Bowie fan, so it would have to be Starman. One day the Michelin inspectors might even make it come true.

What one thing could you never be without?

Clingfilm.

What would you do if you won the lottery?

I would still run the restaurant, and invest in it – but I'd work one less day a week, and play more golf.
